Dietetic Internship Program


Mission and Goals


Institution Mission
University of Iowa Hospitals and Clinics, in compliance with the Code of Iowa, serves as the teaching hospital and comprehensive health care center for the State of Iowa, thereby promoting the health of Iowans regardless of their ability to pay. The University of Iowa Hospitals and Clinics, in concert with the University of Iowa health science colleges, functions in support of health care professionals and organizations in Iowa and other states by:
  • offering a broad spectrum of clinical services to all patients cared for within the Center and through its outreach programs;
  • serving as the primary teaching hospital for the University; and,
  • providing a base for innovative research to improve health care.

Department Mission

The Department of Food and Nutrition Services will provide quality service to all customers of the University of Iowa Hospitals and Clinics in a caring and professional manner.  The department is a leader in the nutritional care and education of patients, staff and students.  Our hospitality focus extends to the community through our efforts to support community nutrition needs.

Internship Mission

The University of Iowa Hospitals and Clinics Dietetic Internship will prepare individuals to transition from a student to a professional by integrating didactic knowledge of food and nutrition with practical experiences in dietetics.  The program will prepare competent, entry-level dietitians for the institution, state, and surrounding states for positions in clinical, foodservice management or community nutrition to promote the quality of life of Iowans and others by providing knowledge and information on nutrition and health.  The program is structured to provide learning opportunities utilizing state-of-the-art technology, exceptional clinical and management training, knowledge of research methods, varied community experiences, and a masters degree option promoting a commitment to life-long learning, technical knowledge, and participation in research.

Goals of the Dietetic Internship Program

  1. The dietetic internship will prepare highly qualified entry-level Registered Dietitians.
  2. The dietetic internship will produce graduates committed to attaining a graduate degree and motivated to be a life-long learner.
  3. The dietetic internship will produce graduates who are technically competent and able to incorporate new technology, resources, and knowledge into practice.
  4. The program will provide mentoring opportunities to foster participation in research relating to food and nutrition.

Learning Outcomes of the Dietetic Internship Program:

Dietetic interns will demonstrate the ability to communicate effectively in individual and group settings.

  • Interns will have the demonstrated ability to provide nutrition counseling sessions.
  • Interns will have the demonstrated ability to communicate in group settings and to provide group presentations.

Dietetic interns will provide comprehensive nutrition care based on accurate and complete assessment and outcome plans for their patients/clients.

  • Interns will demonstrate the ability to provide nutrition assessment to individuals with basic and complex medical conditions.
  • Interns will demonstrate the ability to provide comprehensive nutrition care.
  • Interns will demonstrate the ability to provide nutrition assessments to individuals receiving enteral and/or parenteral feedings.

Dietetic interns will demonstrate the ability to apply management skills to the successful operation of a food service operation.

  • Interns will demonstrate the ability to participate in human resource functions.
  • Interns will demonstrate the ability to participate in facility design and management.
  • Interns will demonstrate the ability to supervise the production of food and manage sanitation and safety issues.
  • Interns will demonstrate the ability to develop and design menus appropriate to the target population’s health status.
  • Interns will demonstrate the ability to manage the development, modification, and evaluation of recipes and formulas.
  • Interns will demonstrate the ability to supervise the procurement of resources for distribution and service.
  • Interns will demonstrate the ability to implement marketing strategies

Dietetic interns will model professional skills and behaviors, including social responsibility, ethical practice, a commitment to lifelong learning, and the ability to collaborate and work well with others.

  • Interns will demonstrate the ability to perform ethically and professionally incorporating new scientific knowledge into practice and participating in professional activities and lifelong learning.
  • Interns will demonstrate the ability to participate in public policy to urge consumers and lawmakers to learn about the positive role nutrition plays in healthy lifestyles.

Dietetic interns will gain knowledge and develop business and leadership skills necessary to successfully manage resources (financial, human, and physical) in a variety of settings.

  • Interns will demonstrate the ability to supervise quality improvement initiatives and develop and measure outcomes.
  • Interns will demonstrate the ability to participate in organizational change planning and operating plan development.
  • Interns will demonstrate the ability to process financial data.

Dietetic interns will demonstrate the ability to screen and assess nutritional status of the community, develop and conduct a community based project on nutrition issues, and participate in a community-based food and nutrition program.

  • Interns will have the demonstrated ability to supervise the screening and conduct assessment of the nutritional status of the community
  • Interns will have the demonstrated ability to develop and conduct a nutrition related health promotion/disease prevention project.
  • Interns will have the demonstrated ability to participate, supervise, and evaluate a community-based food and nutrition program
